The Hunter Valley's Iconic Grape Varieties

Let's talk Semillon: The Hunter Valley's Iconic Grape Varieties

Okay, let’s seriously talk about Sémillon. Known as the Hunter Valley’s very own varietal, it’s time to give this icon the time and recognition it deserves. It’s a wine that's bright, crisp, and bursting with zesty citrus when it's young, yet can transform over time to reveal incredible nutty notes. It’s actually one of the longest-living white wines on the planet!

Here at Tulloch, one of our specialities is producing this iconic Hunter Valley grape. Our focus is to produce consistently high-quality Sémillon that suits the Australian summer lifestyle. Let’s take a closer look at one of Tulloch’s proudest varietals we produce.

Why is the Hunter Valley known for its Semillon?

Here's a fun fact: Sémillon only thrives in two places in the world! Bordeaux, France, and right here in the Hunter Valley. That puts us in a pretty exclusive club! The difference between the two is that the Hunter Valley is home to the world's finest, longest-lived dry Sémillons, which is why we celebrate it as a single-varietal star.

Unlike in France (where it often needs oak or other grapes to add complexity), the Hunter Valley Sémillon shines for its purity. The grape's high natural acidity, combined with our long, warm growing season, produces wines that are light and zesty when young.

How is a Semillon made?

One of the most amazing aspects of this wine is how the Hunter Valley heat transforms this grape into a national treasure! One of the most fascinating things about Hunter Valley Sémillon is the huge difference between its youthful vibrancy and its incredible potential to age.

When it’s young, it's typically light and zesty with bright acidity and pure citrus flavours (think fresh-cut grass and lemon zest). This makes the wine super refreshing! Here at Tulloch, we often mature our young wines in the cellar for 1 to 3 years to let those flavours start to integrate nicely. If you enjoy a young Semillon, we suggest you go for our Hunter River White Semillon. It is a ready-now Semillon bursting with crisp flavour.

Interestingly, the traditional Hunter Valley style relies on a minimalist approach; we typically make it without using oak barrels. This allows the grape's true characteristics and the local terroir to shine through.

Over the years, these wines also develop deep, complex flavours such as honey, nuts, toast, and lanolin, while retaining that wonderful, bright acidity. This combination of a fresh, lively white with a layered sweet wine is exactly why Sémillon is so special here in the Hunter. Our Julia Semillon is made to cellar and will reward patience for years to come. Put it away, forget and treat yourself down the track!

Key notes:

  • Nose: Lifted citrus aromas with fresh lime zest.
  • Palate: Intense citrus notes harmonise with a zesty sherbet citrus finish.
  • Finish: Features a textural palate structure over a talc and soft mineral acid finish.

Perfect pairing:

  • Seafood: Oysters, prawns, grilled white fish, steamed clams, and salt and pepper squid.
  • Fresh summer salads: Zesty salads with citrus dressing, roasted vegetables (peppers, courgettes), and light vegetable dishes.
  • Other: Fresh fruit, sushi, and light chicken dishes.

Why is the Semillon such a hit?

Sémillon really stands out because of its versatility. Its unique natural makeup means it can produce superb wines across the entire spectrum, from delicate, dry styles right through to rich, sweet dessert wines.

But for the Aussie summer? The classic Sémillon, such as the Semillon Hunter River White Heritage Range 2025, is simply the best. Its refreshing and cleansing properties make it a hugely popular choice, especially when you're chilling by the pool with some fresh seafood like prawns or oysters.
