Grilled Peach, Burrata & Prosciutto Salad

 

Every month, we put a recipe to the test in true Tulloch style - simple, seasonal, and made for sharing.

This month, Adam stepped into the kitchen to trial this grilled peach, burrata and prosciutto salad, looking for a dish that captures late summer freshness while pairing beautifully with a crisp glass of white.

The verdict?

Ingredients

3 ripe peaches, halved and stone removed

1 large ball burrata (or 2 small), torn

100g prosciutto

mixed salad leaves (rocket, baby spinach or similar)

Extra virgin olive oil

Balsamic glaze

Sea salt & cracked black pepper

Fresh basil leaves

Method

1. Heat a grill pan or BBQ to medium-high. Lightly brush the cut side of the peaches with olive oil.

2. Grill peaches cut-side down for 2–3 minutes until lightly charred and caramelised. Remove and allow to cool slightly, then slice.

3. Arrange salad leaves on a large platter. Scatter grilled peaches evenly over the top.

4. Tear burrata over the salad, allowing it to sit naturally among the peaches.

5. Drape prosciutto across the platter.

6. Finish with a drizzle of olive oil and balsamic glaze, season with salt and pepper, and garnish with fresh basil if using.

7. Serve immediately while peaches are still slightly warm.
